Thanks everyone for being so patient while I took a little time off to take care of my family in Seattle. Everyone there is doing great. However, I have a gnarly cut on my finger after a glass exploded in my hands while I was doing dishes the other night. There is nothing like a 10:45pm visit to the urgent care that closes at 11. Late nights are rough on this elder millennial. Does 11 count as late? Don’t answer that.
All of that to say, I’ve been leaning on the comfort food this week including a little something sweet in the morning, and probably a little something to help get through the afternoon along with a second, ok third, cup of coffee. Coffee cake topped with buttery crumble and a layer of jam in the middle is the perfect antidote to tired eyes and glued knuckles.
This cake has a soft, moist crumb topped with buttery crumble made from toasty, crunchy nuts, and chewy coconut. There is also a layer of crumble and a secret jam river hiding in the center. The jam gives the cake some bright flavor and a pleasant layer of goo.
The flavors are adaptable, switch out the nuts for whatever you prefer although I would suggest something soft and fatty like walnuts over something crunchier like almonds. The jam can be swapped too so grab that jar that’s been lingering in your fridge and make a cake!
