I’m sorry to barge into your inbox during what is usually a quiet email time, but I have a few snacks that I think you might like to eat in your pajamas on the couch while watching the entirety of Somebody Somewhere or maybe with a glass of bubbly on New Year’s Eve?
I’ve always loved this blissful week in between Christmas and New Year’s Day when no one knows what time or day of the week it is. Most meals are leftovers and/or cookies. There’s a lot of lounging. In my prebaby life I always did a big puzzle during this week, but this year I’m chasing around my Grinch-bellied toddler (still eating the leftovers and cookies though). I worked in a restaurant for a long time, where I did not have the luxury of this time off so I truly appreciate it.
I like to think that I channelled Cher’s Mrs. Flax from Mermaids in this set of recipes, but instead of, “cheeseball pick me ups, miniature franks, and for dessert, marshmallow kabobs” We’re having pigs and pickles in a blanket (fun, nostalgic, delicious!) spinach artichoke dip (high protein from the cottage cheese and it’s practically a vegetable), persimmon and mozzarella skewers (fancy, but the easiest one) because eating food off of a toothpick is luxury…and leftover cookies for dessert.
So, if you’re having people over or you just need some snacks to tide you over until you have the desire to cook an entire meal, here are some low-lift recipes that you can enjoy at any gathering. Yeah, you could make a cheese plate or grab a tray of shrimp cocktail from Costco, but you could also make these tasty little snacks with five ingredients or less and minimal cooking.
