Perhaps you’ve stumbled upon Marry Me Chicken floating around the internet? The recipe went viral on TikTok earlier this year, and suddenly everyone was making creamy sun-dried tomato sauce. And although I ate many sun-dried tomato cream cheese slathered bagels growing up, I had kind of written sun-dried tomatoes off as a 1990s thing like raspberry vinegar or bbq chicken pizza. They’ve had their time in the spotlight, but there are so many new and better and more exciting ingredients.

This is me admitting I was wrong. Justice for sun-dried tomatoes! Sun-dried tomatoes are packed with sweet, tart, vegetal and fruity flavor, and are relatively shelf stable. I’m sure that Marry me Chicken is responsible for bringing them back in the spotlight, but I think part of the reason they are swinging back around is because they are an excellent vegetarian source of umami flavor. They can add depth to vegetable, grain, and bean dishes. Tomato sauce (vodka sauce?!), sandwich spreads, quiche or fritattas, salad dressing, pasta or grain salads? They could all benefit from some finely chopped sun dried tomatoes. I like to buy the oil packed variety. An open jar will last for a long time in your fridge, but I’m sure once you have them around you’ll find yourself adding a bit here and there to your recipes.

The recipe of the day is this savory quick bread. I love a savory bake and this quick bread has a generous amount of sun-dried tomatoes, parmesan cheese, and fresh basil with a little cornmeal for texture in there too. There is also a bit of sugar which might seem out of place in a savory recipe, but it helps balance all of the flavors, and also encourages browning on the top and sides of the loaf. You can leave it out, but your loaf will be a little sad and pale without it!

Eat a slice as a snack, serve it alongside soup or salad for dinner or put it out with your cheese plate. Its a nice little something to have with a bev for cocktail hour.
