This is what I term a "fine dining" cornbread - the best I've ever had - and proved to be a really special side at our dinner with family: buttermilk-brined roast chicken and veggies. Made according to the recipe, except I only had medium grind cornmeal on hand, and no pepitas (my wife had spirited them away for snacking). So the top was sprinkled with a little Maldon. I forgot to include a parchment sling for lifting out of the pan - but no problem. During dinner, the cornbread quickly disappeared! It was a real crowd-pleaser! You've added another entry in our make-again recipe collection. Thanks, Yossy!

This really hit the spot. What I thought was fine cornmeal in my pantry turned out to be semolina, which I only discovered after I was was past the point of no return. So, I went with it - and it’s delicious! ❤️

I saw my Cuban hair cutter at the produce aisle and asked her what a certain vegetable was (we have lots from the tropics). She said Calabaza. She roasts it first and makes soup with carrots, onion, garlic, thyme. Blend and add mango and oranges & a little lime at the end. Can add coconut milk too and a dollop of yogurt.
